Spring is here and our medicine is appearing left and right. Paying attention to our environment and the plants growing is one of the best forms of a personal check ins for me, and its a dandelions forest in my garden! Thought sharing a simple and delicious recipe for the spring time would be nice. This is an easy dressing that is wonderful on salad, grains and roasted vegetables. Remembering how food is our most important medicine.
Dandelion Green Vinaigrette
- 1/3 cup of raw unfiltered apple cider vinegar
- 2-3 tbsp local honey
- 2 cloves of minced garlic
- 1/2 cup extra virgin olive oil
- 1 handful of Dandelion greens (washed)
- Salt and pepper to taste
Add to blender and blend on low until smooth
Dandelions are an amazing bitter for supporting our liver and help facilitate the break down of fats and proteins. Dandelion leaves also help build the enzymatic layer in our gut that provide a home for beneficial bacteria.
